Chef's Table - Francis Mallmann

"If I am cooking something like a steak and look at it and say 'I'm gonna cook this for 9 minutes' then I put it there and leave it there for 6 minutes and then turn it for the last 3 because what happens is that when you put it on a surface which is hot the first thing it does is it's going to stick to it but slowly it will make this crusty layer and you will be able to move it without breaking it. I do not believe in flipping and flopping food. You have to respect what you cook."
